Tequila is an agave based spirit made primarily in the area surrounding tequila, about 30 miles northwest of Guadalajara and in the highlands of the western Mexican state of Jalisco. The Volcanic soil in the region is well suited to the growing of the cactus like blue agave which is the only genus of the agave plant used to make tequila. Over 300 million of the plants are harvested there annually.
Tequila was first produced in the 16th century by the Spanish conquistadors. When they ran out of their own brandy they began to distill this agave drink to produce North Americas first indigenous distilled spirit.
Tequila is bottled in one of five categories:
- -Blanco (white) or Plata (silver) : white spirit, un-aged and bottled or stored immediately after distillation.
- -oro (gold): un-aged “Blanco” tequila blended with caramel coloring to resemble an aged tequila
- -Reposado (rested): aged a minimum of 2 months but less than a year in oak barrels
- -Anejo (aged): aged a minimum of one year but less than three in oak barrels
- -Extra anejo (extra aged) this category was recently established in 2006. Refers to tequila aged a minimum of three years in oak barrels

Other ingredients include red plantains, pineapples, almonds, white rice and its namesake chicken breast suspended by string in the atmosphere of the still for the 24 hour 3rd distillation. The breast is for balance so the fruit does not dominate the mescal.

On May 5,2011 Agave filled our oak barrel with silver tequila. We have since been patiently enjoying the aging process. On August 5,2011 we first made it available to the public as a reposado. It continues through the aging process and will officially mature to an anejo on May 5,2012. We offer table size tasters so you can continue to sample it and appreciate the changes the aging process has on the flavor.
